Meringue Nests with Strawberries & Cream

This recipe is suitable for vegetarians.

Approximate cooking time: 2.5 hours

Serves: 20


300ml chickpea fluid from cans

1 tsp cream of tartar

¾  cup caster sugar

1 tsp vanilla


      1. Preheat oven to 110⁰C
      2. Put chickpea fluid into a bowl and beat until it doubles in size and forms soft peaks
      3. Add cream of tartar and beat for another 1 minute
      4. Slowly add in caster sugar, beating well after each addition
      5. Add in vanilla and continue to beat
      6. Mixture should form stiff peaks
      7. Spoon mixture onto prepared baking trays (2 dessert spoons per nest)
      8. Smooth down and create an indent in middle
      9. Cook in oven for 2 hours – do not open oven
      10. Remove from heat and allow to cool
      11. Pipe on cream, and add strawberries and chocolate
