Apple Dessert Recipes from Riviana

Apple dessert recipes from our Foodservice Ambassador, Dr Karen Abbey utilising Riviana apple and pear products.

As summer comes to an end and autumn takes over,
apple season comes into play.

To get back into the spirit of the season,
try these delicious baked apple desserts that will
warm you up on a cool autumn day!


Apple Bake (Gluten & Dairy Free)

Apple Bake

Serves 10
Approximate cooking time: 1 hour

Ingredients

1kg of pie apple (Riviana diced apple)
1 tsp cinnamon
¼ cup honey
2 eggs
¼ cup sugar
1 ½ cup self-raising flour
½ cup Riviana pear juice

Method

1. Preheat the oven to 180⁰C.
2. Place the diced apple, cinnamon and honey in a 20cm by 30cm baking dish.
3. To make the top layer, beat the eggs with sugar in a mixing bowl.
4. Add 1 ½ cup self-raising flour with the pear juice and mix to combine.
5. Pour the mixture over apple, smooth the top layer and drizzle it over with honey.
6. Bake in oven for 30 minutes until golden brown.
7. Serve this apple bake warm either with custard or vanilla ice cream.


Apple and Walnut Muffins (Gluten & Dairy Free)

Muffins

Serves 20
Approximate cooking time: 40 minutes

Ingredients

150g margarine
250g 1 ¼ cup caster sugar
2 eggs
225g 1 ½ cup self raising flour
60ml ¼ cup Riviana pear juice
450g Riviana diced apple
55g ½ cup walnuts
2 tsp mixed spice

Method

1. Preheat the oven to 170⁰C.
2. Beat the margarine and sugar together in a mixing bowl until light and creamy.
3. Add one egg at a time beating well after each addition.
4. Sift the flour and fold in with pear juice.
5. Add the apple, walnuts, mixed spice and stir to combine.
6. Spoon the mixture into each paper case and bake for 15 minutes.


Apple and Cinnamon Muffins (Gluten & Dairy Free)

Muffins

Serves 12
Approximate cooking time: 40 minutes

Ingredients

150g margarine
200g 1 ¼ cup caster sugar
2 eggs
225g 1 1/32 cup self-raising flour
60ml ¼ cup Riviana pear juice
200g Riviana diced apple
1 tsp cinnamon
Caster sugar and cinnamon and more diced apple to top each muffin

Method

1. Preheat oven 170⁰C Line a muffin tin with paper cases.
2. Beat margarine and sugar together until light and creamy.
3. Add one egg at a time beating well after each addition.
4. Sift flour and fold in with pear juice
5. Add in apple and cinnamon.
6. Spoon mixture into each paper case and top with cinnamon and sugar
7. Bake for 15 minutes.
