Apple and chocolate muffins

  • 120g margarine
  • ½ cup brown sugar
  • 1 tsp vanilla essence
  • 4 eggs
  • 3 tbsps cocoa powder
  • ½ cup almond meal
  • ½ cup Riviana pear juice
  • 1 cup Riviana diced apple


  • Preheat oven 180⁰C and cut up baking paper into ten squares
  • In a bowl beat margarine and sugar together until light and creamy
  • Add in vanilla essence
  • Add one egg at a time
  • Fold in almond meal and flour
  • Fold in pear juice
  • Take the paper pieces and press into a muffin tin
  • Add two spoonfuls of mixture to each and push down
  • Top with extra apple and brown sugar (optional)
  • Cook for 15 minutes
  • Cool and serve as is or with custard and ice cream
